A regular staple of winter, soup can warm the body and soul and this Slow Cooker Minestrone Soup recipe will do just that.  I cannot tell you how many chilly Texas days have been warmed with a hot bowl of delicious soup. For me, I added fresh kale and parsley straight out of my garden. The spices and fresh herbs are key additions too that will bring this soup to life.
